1.   I use a shallow oval dish, but a round one, even an ovenproof plate, would be fine.

2.   Remove to an ovenproof plate lined with paper towels, and keep warm in heated oven.

3.   Turn fish onto an ovenproof plate browned-side up, sprinkle with salt and pepper, and put it in oven.

4.   Turn heat to low, remove steaks to an ovenproof plate, and place in oven.

5.   With spatula, carefully remove to ovenproof plate.
