1. Banks blends Nino Franco prosecco and pear puree with a touch of raspberry liqueur to make a derivative of the bellini. 2. Add pear puree, boil and scrape pan with a wooden spoon to remove browned bits. 3. Place the pear puree in a saute pan set over medium heat and bring to a simmer. 4. Take a generous spoonful of whites and stir them into the cooled pear puree to lighten it. 5. Stir in pear puree and cardamom, and bring to a boil. 6. The first recipe I tried was a pear anise puree that can be used to make a light and luscious souffle. 7.
