21.   Place crust in deep pie pan, pressing dough into bottom and up sides.

22.   Press dough into pan and trim edges.

23.   Press dough into the bottom and sides.

24.   Press the dough against the sides of the pan and trim the overhang.

25.   Press the dough firmly into two balls, one larger for the bottom crust.

26.   Pulling up the corners of the wrap, gently press dough into a small disk.

27.   Scrape the dough onto plastic wrap and use the wrap to press the dough into a thick, flat disk.
