1. As soon as the mixture begins to set, stir in the essences. 2. Cook and stir just until thickened and mixture begins to boil. 3. Add a little sifted flour if the mixture begins to separate. 4. Begin timing when the mixture begins to bubble. 5. Blend until the mixture just begins to come together, being careful not to overmix. 6. Add peach juice, stir and chill until mixture begins to thicken. 7. Add a little more stock if mixture begins to thicken. 8. Add milk and cook in a saucepan or double boiler until mixture begins to thicken. 9. Add to the agar-juice mixture, and simmer, stirring, for a few minutes over low heat until the mixture begins to thicken. 10. Add the flour mixture and butter to the food processor and pulse until the mixture just begins to hold together. |
