1.   Before the Mexican opener, fans were not munching hot dogs, but platefuls of peanuts smothered in chile sauce.

2.   Breakfast was an enchilada casserole made with eggs, potatoes, tortillas, cheese and a green chile sauce made from Hatch chiles.

3.   Combine hoisin sauce and chile sauce and garnish with the peanuts.

4.   Dabbed on top of the masa is the meat filling prepared with red chile sauce.

5.   Help yourself to a spoonful of the sweet but hotter-than-hell chile sauce.

6.   Hot dishes included a fabulous chicken curry, tandoori chicken, steamed shellfish in chile sauce, grilled lobster and carved lamb.

7.   In a separate bowl, whisk together vinegar, sweet chile sauce, lime juice and oil.

8.   In Hanoi, a chile sauce is also offered.

9.   It is usually roasted and used in green chile sauces, stews, rellenos and salsas.

10.   Just before serving, drizzle heated chile sauce decoratively over the sides, then drizzle crema over the top and finally sprinkle on the crumbled queso fresco.
