31. Slowly stir in buttermilk and cook until mixture almost comes to a boil. 32. Stir until sugar dissolves completely and mixture comes to a boil. 33. Stir until sugar is just dissolved, then allow mixture to come to a boil. 34. Stir with a small wooden spoon until the sugar is dissolved and the mixture comes to a boil. 35. The mixture must not come to a boil before all the sugar crystals have dissolved. 36. When the cream mixture has come up a boil but is not boiling, gradually stir a small amount of it into the whipped yolks. 37. When the brownie mixture comes out of the oven, it is very puffed and light. 38. Whisk in half-and-half and continue whisking until mixture comes to a boil. 39. Whisk until mixture comes to a boil, then reduce heat to low. 40. Work in the butter and egg white until the mixture comes together. |
