81.   Add creme fraiche, and continue to puree until mixture is a smooth paste the color of a fresh pea.

82.   Add eggs and beat on medium speed until mixture is blended and smooth.

83.   Add eggs, and beat just until mixture is fluffy.

84.   Add flour and stir until mixture is smooth.

85.   Add garlic and pulse until mixture is very fine.

86.   Add mayonnaise, and process until mixture is smooth and bright green.

87.   Add more flour to create a firmer mixture, or more salsa if mixture is too stiff.

88.   Add powdered sugar and melted butter and beat until mixture is smooth.

89.   Add tamarind juice, vinegar, sugar, fish sauce, and paprika, bring to boil, and stir constantly until mixture is syrupy.

90.   Add the cream, and continue to reduce until mixture is thick enough to coat the back of a spoon.
