81.   Remove pan from heat, and use a slotted spoon to transfer beef and peppers to a plate.

82.   Remove pan from heat, stir in the mustard and add salt and pepper as needed.

83.   Remove pan from ice bath before custard sets hard.

84.   Remove pan from oven and cool on a rack.

85.   Remove pan from oven and turn off heat.

86.   Remove pan from oven and, using a large spoon or spatula, carefully rub the outside of the antelope racks with the ground coriander seeds.

87.   Remove pan from oven to wire rack.

88.   Remove pan to a heat-proof surface and cool.

89.   Remove pans from oven, and trim dark edges.
