Add the scallions and garlic and saute for a minute or so, stirring to prevent browning. 4. Bring the soup to a boil over medium-high heat, stirring to prevent the soup from sticking and burning. 5. Cook over medium-high heat until volume is reduced by half, stirring to prevent sticking. 6. Continue stirring to prevent burning. 7. Keep stirring to prevent grains from sticking to pan. 8. Once apples soften, sprinkle with sugar and continue cooking until sugar is absorbed, stirring to prevent sticking. 9. Pour lemon juice over peaches and stir to prevent discoloring. 10.
