1. A surprising amount of fat does melt away and is easy to pour off if you place the pork on a rack above the cooking pan. 2. Place pork in large resealable plastic bag and marinate overnight. 3. Place pork on a mesh rack in a roasting pan. 4. Place pork on banana leaf. 5. Placed cubed pork in a large, heavy skillet and brown well. 6. Place pork in juice mixture, cover and refrigerate. 7.
