1.   If desired, peel eggplant.

2.   It is not necessary to peel eggplant or tomato since skins will soften considerably.

3.   Peel eggplant and cut into slices.

4.   Peel whole eggplant and pierce in several places.

5.   Peel the eggplant, then mash the flesh with a fork, including any smoky juices.
