1. If the mixture seems dry, add water. 2. If the mixture seems too dry, add a little more olive oil and lemon juice. 3. The mixture will seem too wet at this stage, but it will firm up when chilled. 4. Add a little more olive oil or some of the pasta water if the mixture seems dry. 5. Add more cream if mixture seems too dry. 6. Add a bit more liquid if the mixture seems too dry. 7. Add a little milk, olive oil or lemon juice if mixture seems too dry. 8. If mixture seems very crumbly, add honey as needed, but do not use too much or it will become very sticky. 9. If mixture seems too thick, add a little water. 10. If the mixture seems too dry, add enough of the reserved mushroom-soaking liquid to moisten. |
