41.   Place roast in roasting pan and add vegetables around sides.

42.   Place rosemary and lemon slices in cavity of chicken and set chicken on rack in roasting pan.

43.   Place the turkey, breast side up, on a rack in roasting pan.

44.   Remove the baking dish from roasting pan and cool it on a rack.

45.   Remove dishes from roasting pan and let cool completely.

46.   Season brisket lightly with salt and return to roasting pan.

47.   Skim any film from cooking liquid, place roasting pan on stove over medium-high heat and simmer to reduce liquid.

48.   Skim fat from sauce in roasting pan.

49.   Spoon off all fat from roasting pan.

50.   Spread fennel and onion slices evenly on roasting pan.
