1.   Allow to cool slightly before transferring the cookies to a wire rack.

5.   Leave to cool on a wire rack.

6.   Leave too cool on a wire rack and then sprinkle with icing sugar.

7.   Place ginger on a wire rack to dry for at least an hour.

8.   Place the frozen truffles on a wire rack over a baking sheet.
