1.   Diane Forley, the chef and an owner of Verbena restaurant on Irving Place in Manhattan, started using fruit gelatins last summer.

2.   Her version uses orange gelatin, but certainly apricot could be substituted.

3.   Pharmaceutical gelatin is used in such products as lung patches and gel-caps, and in vaccines.

4.   The slaw used gelatin in the dressing.

5.   Beef gelatin is used in a wide range of products, as diverse as ice cream and cosmetics.
