1. Sprinkle remaining Parmesan over the top and transfer skillet to the top rack of the oven. 2. Arrange on a small buttered baking sheet and place on the top rack of the oven. 3. Bake about five to seven minutes on the top rack. 4. After sprinkling with rub, place ribs bone side down on top rack, close dome and leave the thing alone. 5. Both are dishwasher-safe for the top rack, and neither should be used in the microwave. 6. Place the minced eggplant onto the top rack of a prepared steamer, and steam over high heat just a few minutes, until tender. 7. Place on top rack of dishwasher. 8. Set the top rack in place. 9. Turn duck, meat-side down, and return to oven, placing pan from bottom rack on top rack, and vice versa. |
