1. Invert the cake onto a cooling rack. 2. After a few minutes we push them through to the cooling rack. 3. Brush Glaze evenly over cake and leave to dry on the cooling rack. 4. Carefully invert cake onto cooling rack, then invert again onto another rack to cool right side up. 5. By noon, hundreds of loaves are resting on cooling racks under thick blankets of glaze. 6. Cool slightly on cookie sheet until firm, then remove to cooling rack until thoroughly cool. 7. Cool upright in pan on cooling rack. 8. Cut nine of the tomatoes in half horizontally, and place cut side down on a cooling rack positioned over a baking sheet. 9. Cool completely on wire cooling rack. 10. Drain on a cooling rack. |
