1.   Melt a little butter in a cast-iron skillet and toast one side of each slice of bread until lightly browned and crisp.

2.   Meanwhile, toast one side of each slice of bread.

3.   Now, press down again to toast other side.

4.   On a baking sheet, toast one side of the slices under broiler.

5.   Return sandwiches to broiler and toast both sides of sandwich until golden.

6.   Sprinkle toasted sides with thyme.
