1.   Add an onion, chopped in half, a few celery ribs and a couple of peeled carrots.

2.   Chop the reserved celery rib and add it to the soup, along with the anise seed.

3.   Have an adult help cut off the ends of the celery ribs and chop the celery into very small pieces.

4.   In the meantime, simmer the turkey giblets, the halved onion and the halved celery rib in the water.

5.   Serve surrounded by the celery ribs and a couple of small knives so guests can spread their own.
