Add the carrots and celery tops, bring water to a boil, then turn off heat and let sit for an hour. 3. Quarter an onion and toss in some celery tops, too. 4. Toss the bird in a pot, add salted water to cover and toss in the onion, quartered, and the celery tops. 5. Wrap the celery tops, thyme, parsley, and juniper berries in a piece of cheesecloth and tie with kitchen string. |
