1. Add scallops, and let sit. 2. Add scallops, and sear a minute or so, until lightly browned. 3. Add scallops, and reduce heat to medium-high. 4. Add scallops, in batches if necessary, and sear in uncrowded pan until golden on each side, keeping them medium-rare. 5. Add scallops and toss. 6. Add the scallops, working in batches to prevent crowding, if necessary. 7. When pan is smoking, add scallops, and sear until springy to the touch and browned on both sides. 8. When mixture is hot again add the scallops. |
