11. Accompany with fresh tomato slices and a little potato salad. 12. Add tomato slices, and top with remaining cheese. 13. But it is too easy to fall into a salad rut, tossing a few tomato slices on top of some lettuce with a splash of bottled dressing. 14. Chill the mixture until serving with thin toasted bread slices and tomato slices. 15. Cover with the tomato slices in a tightly packed single layer. 16. Dip each tomato slice into milk mixture, then into flour. 17. Garnish with tomato slices and parsley, if desired. 18. Garnish outside edges with avocado slices, jicama triangles and tomato slices. 19. Grill or broil thin eggplant slices, then top with a little Balsamic Vinaigrette, tomato slices and mixed gourmet greens tossed with more vinaigrette. 20.
