11.   Use small hand-held torch or broiler to melt sugar.

12.   Using oven mitts, caramelize the sugar by shaking the pan occasionally until the sugar is melted and has turned a light golden brown.

13.   When sugar is melted and a light caramel color, add honey and stir until smooth and liquid.
