1. Heat gently to dissolve the sugar, then boil again quickly until the sugar turns golden. 2. Put the sugar and water into the pot and bring to a boil, stirring to dissolve the sugar. 3. Boil mixture over medium heat, stirring, until sugar is dissolved. 4. Add chiles and sugar, stirring to dissolve sugar. 5. Add brown sugar, corn syrup, baking soda and brandy and stir until sugar is dissolved. 6. After sugar is dissolved, place in the refrigerator. 7. Bring both mixtures to a simmer over high heat, stirring occasionally to dissolve sugar. 8. Bring to a boil to dissolve the sugar, then remove from the heat and set aside. 9. Bring to a boil, stirring to dissolve sugar. 10. Bring the Armagnac, tea and sugar to a boil in a small saucepan, stirring occasionally to dissolve the sugar. |
