1.   Add the tarragon, wine and vinegar and bring to a boil, stirring to incorporate all the browned bits.

2.   Drain off the fat, then add the wine, stirring to incorporate all the browned bits on the bottom of the pan.

3.   Grate zest from lime into mixture and stir to incorporate.

4.   Stir to incorporate ingredients.
