1. Grate the rind from the remainder of this one and the second lime and squeeze out the juice from both. 2. Grate the rind of the lime finely and squeeze the juice from the lime. 3. Grate yellow rind of lemons, and finely chop the walnuts. 4. In the meantime, grate the rind from one of the oranges and squeeze the juice from this and a second orange. 5. Using a dull knife, whisk or potato masher, cut in butter and grated rinds until mixture resembles coarse crumbs. 6. ...grated lemon rind. 7. Add the juice and grated rind of the remaining lemon, along with the onion, vinegar, sugar and crushed peppercorns. 8. Grate lemon rind into a bowl with the eggs and beat together lightly with the salt and sugar. 9. The lemon rind can be grated for zest. |
