1. -- In East Texas, like most of the South, we season vegetables with great gobs of bacon drippings or other forms of pig fat. 2. Add to bacon drippings in pan along with shallots and garlic. 3. Add onion to bacon drippings. 4. Add bacon drippings, if you like, and return pan to the heat. 5. Drain bacon fat from pan, add vinegar, return to heat and bring just to a boil, scraping pan to dissolve any bacon drippings. 6. Heat bacon drippings in a large skillet. 7. Heat bacon drippings and olive oil in large saucepan over medium heat. 8. Heat the bacon drippings over medium-high heat. 9. I love black-eyed peas cooked with a dab of bacon drippings, and sweet corn bread. 10. In a large bowl, combine tomatoes, ham, bacon drippings, celery, onion and crumbled cornbread. |
