1.   Once set, the chocolate can be cut carefully into the required shape with a sharp non-serrated knife.

2.   Cut chocolate in pieces.

3.   Cut white chocolate into small pieces.

4.   Cut bittersweet chocolate into small pieces.

5.   Cut chocolate into chunks and melt over a double boiler.
