1. Any water on the greens will dilute the dressing and keep it from coating the greens as desired. 2. Add enough additional dressing to coat the greens lightly. 3. Add the tofu mixture and stir briskly until the greens are coated with seasonings and the excess liquid has evaporated. 4. Add enough of the dressing to coat the greens and toss well. 5. Add lettuce and toss well to coat greens lightly. 6. Add only as much as is needed to coat the greens. 7. I use relatively little oil, since its job is only to help the remaining dressing ingredients coat the greens. 8. In mixing bowl, combine dressing and greens, tossing to coat greens evenly. 9. Pour dressing over them a little at a time, tossing to coat the greens. 10. Toss to coat greens with oil. |
