1. Be careful to buy the Chinese chili paste, because there are chili pastes with garlic from lots of countries. 2. Add garlic, ginger, chili paste and sesame paste, and stir. 3. Add chili paste, rice wine, soy sauce, sugar and Sichuan pepper, and stir-fry another minute. 4. Add the nam prik and stir-fry until the bok choy is evenly coated with the chili paste. 5. Add the sesame paste, soy sauce, sugar, sesame oil, chili paste, vinegar and sherry, and process. 6. Add red curry paste and chili paste. 7. Grind the mixture fine, then add it to the chili paste. 8. In a medium bowl, combine cucumber, chili paste and vinegar, and toss well. 9. In another bowl, combine rice wine, soy sauce, chili paste and sugar. 10. In a separate bowl, dissolve the chili paste in the vinegar. |
