11. Dampen a kitchen towel with very hot water, and wring out. 12. Cover bowl loosely with plastic wrap and tightly woven kitchen towel. 13. Cut in strips while hot and cool pieces on a cloth kitchen towel. 14. Drain rind pieces on a kitchen towel. 15. Drain well, pinching each leek to push out excess water, and lay out in rows on kitchen towel. 16. Dry with a clean kitchen towel. 17. Drain and place in single layers on dry kitchen towels. 18. Firmly squeeze out liquid in a kitchen towel. 19. Form a kitchen towel into a ring and place the metal bowl on top to prevent its moving. 20. Gently press in a clean kitchen towel to dry well. |
