91.   Puree everything on low to medium speed.

92.   Place all the ingredients in a blender jar and process them at medium speed until creamy.

93.   Place cilantro, butter and salt in a mixer fitted with a paddle attachment and beat at medium speed until butter is light and fluffy.

94.   Place shortening and butter in mixing bowl and beat on medium speed until mixture becomes fluffy and creamy.

95.   Place the egg whites in the bowl and, with the whisk attachment, start to whip at medium speed.

96.   Puree at medium speed until smooth.

97.   Remove from freezer and beat with an electric mixer on medium speed until mixture is smooth and no large crystals remain.

98.   Scrape down the sides with a spatula, add the eggs and vanilla then beat again, three minutes on medium speed.

99.   Still mixing on medium speed, begin adding the masa a handful at a time.

100.   Tea is medium speed and milk is the slowest.
