1. As soon as sugar melts and starts to caramelize, stir. 2. Add the brown sugar and continue to cook, stirring constantly, until the sugar melts and is very thick and bubbly -- the mixture is very hot. 3. Add brown sugar and stir until sugar has melted, then wash any sugar crystals from sides of pan with a pastry brush dipped in hot water. 4. After the sugar melts, it will caramelize, turning a rich brown color. 5. Continue cooking over medium heat, stirring, until sugar melts again. 6. Cook over medium-low heat until the sugar melts and the mixture thickens. 7. Cook, stirring occasionally, just until sugar has melted. 8. Continue stirring until sugar melts and begins to caramelize. 9. Continue until the sugar melts into the pan. 10. Cook until the sugar melts. |
