1. After ten minutes remove the cake from the oven. 2. Have ready a sheet of sugared non-stick paper, remove the cake from the oven and turn out immediately on to the sugared paper. 3. Do not remove cake from pan. 4. Do not remove cake from this pan unless you are going to serve it from a different dish. 5. If you remove the cake from the pan too soon, you risk breakage. 6. Just before cake is removed from oven, beat egg whites until foamy. 7. One day, I overcompensated and removed the cakes from the oven far too early. 8. Remove cake from its container and trim evenly to remove the brown from top, sides and bottom. 9. Remove cake from oven and remove collar of pan. 10. Remove cake from pan, and cool completely on a wire rack. |
