1.   In a mixer with whip attachment, whip egg yolks until frothy.

2.   In a clean bowl, with a clean whip attachment, beat egg whites on high speed until foamy.

3.   Put the peeled sweet potatoes into the large bowl of an electric mixer with beaters or a whip attachment.

4.   Using whip attachment at medium speed, slowly add remainder of olive oil, making sure the oil is absorbed before continuing.

5.   With the whip attachment, whip the whites on medium speed until foamy.
