1. If using shiitake mushrooms, remove stems. 2. Brown mushrooms are used instead of white and the eggs are omitted. 3. Chef Erik Cosselmon uses wild mushrooms in this first course that could double as supper, served with a spinach or mixed greens salad. 4. I use dried mushrooms because of their convenience and intensity of flavor, but you can substitute a half pound of fresh mushrooms. 5. Mushrooms can be used in tapenades, in ragouts and stews, over pasta or as part of a risotto. 6. Some were actually promising, like the lasagnas that used wild mushrooms instead of meat. 7. Using portobello mushrooms in this recipe instead of the standard eggplant adds depth and an earthy, meaty texture. 8. The Black Mushroom Steak is served with special black mushroom sauce in which huge, fresh mushrooms are used. |
