1.   I spread it on the browned side after I turned the steak, when it had only a couple of minutes left to cook.

2.   Return lamb to pan, browned side down.

3.   Slide the cake back into the skillet, browned side up.

4.   With tongs, transfer sprouts to a serving plate, browned sides up.
