1. Barley makes a wonderful alternative to arborio rice for risotto. 2. Early in the day, we simmer arborio rice in white wine, then let it cool. 3. I use arborio rice and stock, and follow directions, but I always have this problem. 4. Italian arborio rice is the short-grain variety with this property that is most commonly seen in American supermarkets. 5. Risotto, made with arborio rice, can be made into sophisticated little patties for appetizers at a formal dinner party or as part of a brunch buffet. 6. Spanish rices, labeled bomba, Calasparra or Valencia, are best, although Goya brand short grain and even Italian arborio rice can be used. 7.
