11. Place the turkey in a large plastic bag that will completely cover it. 12. Place turkey on its side on a rack in a roasting pan. 13. Place turkey, breast side up, on a rack in a good-quality, heavy roasting pan. 14. Place one turkey roasting pan over two burners. 15. Place sliced turkey on top, overlapping slightly like a fan. 16. Place the turkey in a large pot with the black-eyed peas, onion, garlic, bay leaf, carrots, celery and the water. 17. Place the turkey on a rack and add a cup or so of water to the bottom of the roaster, along with a sliced onion. 18. Place the turkey, breast side up, on a rack in roasting pan. 19. Place turkey in a colander and rinse under hot water. 20. Place turkey, breast side up, in a large, shallow roasting pan. |
