11.   Rinse escarole well, drain, and pat dry with paper towels.

12.   Rinse turkey inside and out, pat dry with paper towels, and set aside.

13.   Rinse chicken pieces, pat dry and place in casserole dish.

14.   Rinse chicken, drain and pat dry inside and out.

15.   Rinse mushrooms, pat dry and chop coarsely.

16.   Remove the giblets from the turkey cavities, wash cavities and pat dry.

17.   Remove the tenderloins from the marinade, pat dry.

18.   Trim any excess fat, pat dry and coat lightly with olive oil.

19.   Wash the slices, pat dry and place on one end of a large platter.

20.   Wash chives, parsley, dill and cilantro, pat dry and chop.
