11.   Rather than flavor it with sugar and something like vanilla essence, I have used fleur de sel, curry powder and turmeric.

12.   Season lightly with fleur de sel and pepper.

13.   Some of the sel gris is ground to make a finer-textured salt, while the larger crystals and the fleur de sel are simply packaged.

14.   Sprinkle with fleur de sel, and serve immediately.

17.   Sprinkle with fleur de sel, olive oil, vinegar, candied lemon peel and hazelnuts.

18.   Sprinkle with fleur de sel plus another pinch each of sesame seeds and pistachios.

19.   Sprinkle with a little hazelnut oil, a pinch of crushed hazelnuts, fleur de sel and black pepper.

20.   Sprinkle with fleur de sel, if desired.
