1. Heat about an inch of oil in a Dutch oven or skillet and, using tongs, dip tortilla in hot oil on each side briefly to soften. 2. Melt butter in a large skillet and then, using tongs, dip each side of the sandwich into the egg mixture and put in skillet. 3. Remove bird from grill using tongs. 4. Using tongs transfer to a rack to cool. 5. Using tongs, carefully place the hot briquettes in a coffee can or a small stainless steel bowl along with the soaked wood chips. 6. Using tongs, lift the bird to a cutting board or platter, holding a large metal spatula underneath the beer can for support. 7. Using tongs, move the pieces and flatten them to sear all the shells evenly. 8. Using tongs, remove the chicken pieces to a plate. 9. Using tongs, rotate pizza frequently for even browning, checking underside often. 10. Using tongs, turn drummettes over. |
