1. Add the simmering broth, and salt to taste. 2. Add enough of the simmering broth to barely cover the rice. 3. Poach the breasts in a simmering broth made by combining the chicken broth and sherry. 4. When all the fish has been fried, arrange the pieces in warmed bowls and ladle on the simmering broth. |
