1.   Peel the beets and sweet potatoes and cut into slices less than an eighth of an inch thick.

2.   Peel beets or rub with an old dish towel or several paper towels to remove skins.

3.   Peel beets while they are still warm by holding them under cold running water and rubbing off skins.

4.   Then peel the beets and cut into wedges.

5.   To peel baby beets, scrub with a brush before cooking.

6.   When cool enough to handle, peel the beets and cut into small cubes.

7.   When cool enough to handle, peel the beets.
