1.   When the oil is smoking hot add the ginger, shallots and crabmeat.

2.   Add oil and heat until oil is almost smoking.

3.   When the oil is almost smoking, add some of the lamb cubes, being careful not to crowd the pan.

4.   When the oil is smoking, add the steaks.

5.   When oil smokes, add cod and transfer pan to oven.

6.   When oil smokes, add salmon, skin side down.
