1. An optional topping is grated pecorino cheese. 2. Before serving, ziti is cooked according to its regular package instructions, then combined with the sauce and cubed mozzarella and grated pecorino or Romano cheese. 3. Grated pecorino Romano cheese goes well with this sauce. 4. If desired, serve freshly cooked pasta dressed with butter, grated pecorino and some of the sauce alongside. 5. Instead of ricotta salata, my version has fresh ricotta inside and grated pecorino on top. 6. Or serve with grated pecorino cheese to sprinkle on top. 7. Place servings on plates, and sprinkle with grated pecorino and toasted bread crumbs. 8. Serve with a light coating of grated pecorino cheese. 9. Top each casserole with grated pecorino. |
