1.   If not using oil, cilantro mixture can be folded into plain yogurt or mayonnaise for dipping.

2.   Place in a single layer on foil, and spread cilantro mixture evenly over fish.

3.   Pour over cilantro mixture, stir, check salt and set aside to cool to room temperature to use as dipping sauce.

4.   They include gremolada, a mixture of minced lemon peel, garlic and parsley, as well as the piquant Chilean cilantro mixture, pebre.
