71. Add lobster pieces, and sear them over high heat, turning often, until the shells are bright red. 72. Add more salt and pepper and let boil over high heat until all the cooking liquid has evaporated and forms a glaze on the vegetables. 73. Add the cauliflower, and stir, still over high heat, for another minute. 74. Add the mushrooms and saute over high heat until they release their juices, cooking a few more minutes until the juices evaporate. 75. Add the red wine and cook over high heat until it has reduced by half. 76. Add the salt and sugar, then bring to a boil over high heat. 77. Add the tomatoes and stock and bring to a boil over high heat. 78. Add the tomatoes and wine, bring to a boil and cook over high heat until liquids are reduced by three quarters. 79. Add tomato sauce to pot and heat to boiling over high heat. 80. Add water or stock and bring to a boil over high heat. |
