Place potato wedges in a single layer on their cut sides in gratin dish large enough to just hold them. 26. Place the cucumber cups cut side down and close together on a clean work surface. 27. Place the cut side of each piece of dough against a ridged surface and gently press as you roll the dough across the ridges. 28. Roll the cut sides of the gnocchi in more flour as needed. 29.
