11.   The peppery cress was a good contrast to the sweet roasted vegetables, and I loved using the delicious but usually discarded liver.

12.   The smoky sweetness of bacon, along with shallots or sliced green onions, provide a good contrast to the bitter greens.

13.   The tender braised baby bok choy placed under the fillet provides a good contrast to the crispy skin and balances out the sweetness in the dish.
